Unsweetened Chocolate

The purest of all cooking chocolate. With an intense bitter flavor that is full bodied with no additives. Readily available in supermarkets. You can purchase it in 8 ounce bars or 1 ounce squares.

Unsweetened Cocoa Powder

Cocoa powder is made from the dry portion of the chocolate liquor that is left after much of the cocoa butter had been removed.

Dutch-process cocoa: This is cocoa powder that has been treated with an alkali to neutralize acids. This give it a darker color and less bitter taste. It may be used successfully in any recipe unless baking powder or baking soda is called for and there is a difference in the amount of Dutch-process cocoa powder you use in a recipe versus the amount of Natural cocoa powder.
